A night at [aend]
Some meals transcend nourishment; they become stories told on a plate, each course a chapter in a sensory journey. My evening at [aend], nestled in Vienna’s 6th district, was not merely about flavour—it was a celebration of discovery, anticipation, indulgence, and reflection.
With its cool grey tones, open kitchen and minimalistic elegance, [aend] sets the stage for an experience that is both contemplative and bold. The cuisine follows a philosophy of radical simplicity—each dish composed of just two core elements, elevated through precision and restraint. It’s avant-garde without arrogance, refined without fuss.
This visit held a deeper resonance. It marked the final stop on a long-awaited culinary pilgrimage with my childhood friend—a journey two decades in the making. This meal was not just an experience; it was a memory etched in time, seasoned with laughter, and steeped in shared history.
The beginning: a prelude of curiosity
Gillardeau Oyster No. 2 & Cherry Vinegar.
The journey began with a sense of awakening. The oyster delivered a burst of oceanic salinity, its brine softened by delicate cherry vinegar. Cherry stone oil added a nutty depth, while green cabbage brought an earthy crunch. Bright and clean, this was an elegant introduction, teasing the complexity to come.
Langoustine Royale & Buddha’s Hand
After ten hours of slow cooking, the langoustine was impossibly tender, releasing subtle sweetness. Buddha’s hand citrus added a zesty sharpness, while a crisp potato tartlet brought texture. Charcame pearls lent saline richness, heightening the dish’s maritime essence.
Breton Sepia & Egg Yolk
An inventive take on carbonara: silky ribbons of egg yolk met the brightness of finger lime, while yuzu ash contributed a smoky earthiness. It was familiar yet daring, creamy yet electrified.
The middle: the discovery and depth.
Sourdough Bread & Raw Milk Butter
Two loaves – Josef, dark and dense with tang; Josefina, lighter and airier. Spread with raw milk butter from the Semo Balcony, each bite was a study in contrast. Comforting, rich, and quietly powerful.
Hand-dipped scallop & Croatian Tuna
Scallops, delicate and raw, yielded to the richness of Croatian tuna beneath. Vitella tomato added acidity, while a pea, lemon, and Morava olive oil sauce lifted the dish with brightness and depth. It was a poised interplay of land and sea.
Little Atlantic Turbot & Alba Truffle
Dry-aged sturgeon introduced a wave of umami, deepened by a creamy white wine, sour cream and caviar sauce. Shavings of Alba truffle perfumed the air. Heady, earthy, and lingering
White Ikejime Sturgeon & Black Label Caviar
Pumpkin’s gentle sweetness met the sturgeon’s clean delicacy. San Mario wheat provided crisp contrast, while Black Label caviar punctuated the plate with briny intensity.
Zeeland Blue Mussel & Hokkaido Pumpkin
Pasta parcels, filled with soft, creamy mussels, floated in elderflower broth. The fiery acidity of kimchi cut through the pumpkin’s sweetness, adding heat and vibrancy in a surprising, thrilling contrast.
The climax: heightened emotions and richness.
Schneebergland Duck & Périgord Truffle
Seared homeland deer offered gamey depth, softened by Cocky cream and sweetened by ripe fruit. Homemade nougat and coffee brought nutty warmth. Evocative, complex, and rooted.

A5 Wagyu
A luxurious surprise. Marbled, melting, and intense, the A5 Wagyu was balanced by a gently sweet roasted vegetable – perhaps squash or sweet potato. A profoundly savoury sauce grounded the dish in umami splendour.
The resolution: reflection and closure.
Black Soybean & Piura Chocolate
Airy bitter soufflé of Piura chocolate met frozen foie gras, an umami twist that dared and delighted. Verbena cloud lifted the dish with citrus, while fermented black bean chocolate ice cream and shoku sauce added dark, glossy depth.
Grey Poppy Seed & Elderberry
A delicate farewell. A crisp waffle carried the nutty earthiness of grey poppy seeds, offset by sweet elderberry gelée. Sour cream provided tang, cinnamon warmth, final, tender embrace.
The ending is a story worth tasting again.
Each course built upon the last, guiding me through surprise, indulgence and reflection. From the spark of kimchi to the hush of elderberry, every bite left its mark, echoing long after the final plate was cleared.
Visiting Vienna in November lent a special quietude. The city was on the cusp of festivity, yet free from crowds. Dining at [aend] was a gastronomic encounter; it was also the creation of memory through flavour and time.
People often say life is about experiences. About travel, challenge, and companionship. Sharing this extraordinary meal with Matt, my friend of over two-thirds of my life, was unforgettable.
And as the evening drew to a close, we were already planning our next chapter. Hopefully, it won’t take another twenty years.
